Happy St. Patrick's Day everyone! I hope you're all planning on enjoying some corned beef and a green beer this evening. Or, if you're pregnant more in the mood for something sweet/carbtastic, I have a wonderful recipe to share with you today.
As part of our "Lucky (recipe) Linkup" I was paired with the lovely Veronika, from Veronika's Blushing and got to make her delicious recipe for Lucky Charms Treats. These are basically rice krispie treats with Lucky Charms instead. You absolutely cannot go wrong with this recipe and it's super simple and easy. I was thrilled to get this recipe because my poor husband is allergic to green food coloring, so had I made something green, I would have had to eat it all myself (poor me, right?). Luckily, this one could be enjoyed by the entire family.

- 4 tablespoons butter
- 1 large bag of marshmallows
- 6 cups Lucky Charms cereal
(you don't need the giant family size box, unless you're like me and wanted plenty of leftovers)
- Grease 9x9x2-inch pan
- Melt margarine and marshmallows in a large pan until smooth.
- Let slightly cool (so as to not melt Lucky Charms marshmallows).
- Stir in Lucky Charms until well coated.
- Press into pan with buttered hands.
- Cut into squares when cool.
Couldn't be any easier.
And then look at all that marshmallowy goodness.
I my opinion, you can't ever have it "too marshmallowy" - so feel free to add extra mallows or reduce the amount of cereal used.
This made a giant pan of treats. They're a bit harder (more dense) than rice krispie treats, but extra sweet and crunchy. I like to put mine in the microwave for 3-5 seconds and get them warm and extra gooey before eating.
CAUTION: They will attract lots of attention from toddlers. Beware of wandering grubby little hands...
Kid-tested....mother approved.
